Deirdre Scaggs, associate dean for the Special
Collections Research Center, is the author of “Compiling
and Writing The Historic Kentucky Kitchen,”
published in the current edition of Archival Outlook, a publication of the Society
of American Archivists. In the article she discusses the archival and culinary processes of turning 18th and 19th century recipes into a cookbook.
Deirdre
wrote The Historic Kentucky Kitchen (University Press of Kentucky, 2013) with Andrew W. McGraw. The volume
brings to life historic recipes found in the archives of the SCRC.
In the
article, Deirdre describes the process of finding, studying, and ultimately
cooking the historic recipes.
